Second-day Test for Ageability

To determine whether a vintage of a wine is worthy of the cellar or should be enjoyed at the next party try this method. First, pour a glass and then immediately cork the bottle. Next, taste and notice all nuances. Pour another glass a couple of hours later and revisit your first impressions. Now, leave the corked wine on the counter overnight. The next day, taste again. If it's as good or better, you can generally expect it to age well for many years!

Come the festive season, there's nothing better than a spiced, warming glass of this mulled wine! Here's one of our staff's family recipes. We'd love to see some of yours as well!

Mulled Wine

2 bottles of red wine (we suggest Plateau Pinot Noir)
4 oz. port or brandy
12 whole cloves
4 cinnamon sticks
1 large orange, zested
Combine ingredients in a large pot and bring to a simmer. Do not allow mixture to boil. Heat for 20 minutes and serve. Happy sipping!!
